Fajita Recipe

Ingredients:
  • Fajitas kit

    Old El Paso Roasted Tomato and Pepper Fajita Kit 500g (£1.99 RRP £3.22). The kit consists of 8 soft salsa tortillas, 1 roasted tomato and pepper seasoning mix and 1 spicy tomato and pepper salsa

or

Santa Maria Fajita Kit 470g £1.99 RRP £3.22). The kit consists of soft flour tortillas, 1 fajita seasoning mix and 1 medium salsa

  • ½ red, ½ yellow an ½ green pepper (sliced)
  • 1 Onion (sliced)
  • Oil (Flora sunflower oil cooking spray 300ml £.099 RRP £2.00)
  • Chicken (Approved Food meat hamper £15) (optional)
  • 100g plain yogurt
  • 1 Avocado (sliced)
  • Cheese (grated)
Method:

Add the sliced peppers and onion to a bowl. Toss with the roasted tomato and pepper or fajita seasoning. Next, put some oil  into a frying pan and heat on medium heat. When the pan is hot, fry the peppers and onion until soft but tender. (If using chicken preheat a frying pan on medium and add the sunflower oil. Chop up the chicken and fry, until browned. Next, slice the peppers and onion. In a bowl toss with the roasted tomato and pepper  or fajita seasoning. Add the veggies to the chicken and cook on medium heat until the veg is soft but tender and the chicken is fully cooked.) Finally, chop up the avocado and grate the cheese.

Time to assemble the fajitas: get one tortilla, add a blob of the salsa in the centre. Add the chicken if using. Add pepper and onion mixture on top. Spoon on the plain yogurt, lay some chopped avocado on top and scatter some grated cheese. Fold up and enjoy!

Most importantly, make sure the food is piping hot before eating. *Leftover veggie or meat mixture can be frozen on the day but make sure it is fully cooled beforehand *.
