RECIPE 2: Chargrilled Chicken and Spicy Cous Cous

Heidi said: “This is a recipe I created in the week as I am following the slimming world diet. Approved Food helps me keep the costs down by buying my dried pasta / rice / cous cous and packet foods from you, allowing me to afford the fresh fruit and vegetables and meat and chicken which are needed to eat healthily, but cost a fortune!”

Ingredients

  • 2 x chicken breast – approx £2 from local market
  • For the marinade: Lemon juice, 1 tsp ground ginger and 1 tsp finely grated garlic (I used ready crushed frozen garlic) and 3 tbsp mild curry powder
  • 1 x pack of Sammys Exotic Spicy Cous Cous – 60p from Approved Food

Serve with rocket approx £1 from Tesco and any other veggies in the fridge and plain fat free yoghurt to dip – 55p from Lidl (optional).

Instructions

  1. Cut the chicken into thin strips and place in a bowl with the lemon juice, ground ginger, garlic and curry powder. Toss to mix. Cover and leave to marinate in the fridge for at least 1 hour (overnight if possible).
  2. Remove the chicken from the marinade. Heat a non-stick griddle pan sprayed with Fry Light. Add the chicken to the pan (in batches if necessary) and cook for 6-8 minutes, turning once, until cooked through.
  3. Prepare cous cous as per instructions.
  4. Divide cous cous and salad onto plates, pour yogurt into small dip bowls and place on plates, place chicken strips over cous cous.

Serve and enjoy!

Heidi adds: “This was a simple but very tasty and satisfying meal.The marinade can be spiced up to your liking and the yoghurt is great for cooling the mouth if you like it hot! The salad is flexible and can be made up from whatever leftovers you have. It made masses so could easily stretch to 3 people or leave some for the next day like I did :-)”
