Sausage Stew Recipe

Ingredients:

  • Sausage (Approved Food meat hamper £15) or veggie sausage
  • 3 large potatoes
  • 2 large carrots
  • Baked beans (Heinz Beanz no added sugar 200g 2 for £1.00 or £0.59 each RRP £0.69) (Heinz Beanz 415g x6 £2.99 RRP £3.85)
  • Chopped tomatoes (Don Mario Chopped peeled plum tomatoes in Tomato Juice 400g 2 for £1.00 or £0.59 each RRP £0.69)
  • ½ tsp pepper
  • ½ tps Salt (Saxa Table Salt 750g 2 for £1.00 or £0.59 each RRP £0.85)
  • ½ tsp mixed herbs
  • Butter to cover the potatoes

Method:

Preheat the oven to 180C/160C fan/gas mark 4. Add oil to a frying pan on medium heat and add the sausages once the pan is hot. Cook until fully cooked inside, rotating occasionally. Make sure they are cooked throughout and allow them to cool. Slice the carrots and potatoes thinly and boil in salted water until soft but tender, drain and set aside. Add the baked beans, chopped tomatoes, carrots, pepper, salt and mixed herbs to a large pan, heat on medium until soft, stirring occasionally. Add the sausages to the bean mixture.

Time to assemble the stew: add the sausage and bean mixture to a heat proof dish and law over the sliced potatoes. Add melted butter to the potatoes and bake for 40 minutes. Turn up the heat to 200C/ 180C fan/gas mark 6 and further cook for 15-20 minutes until the potatoes are brown. Make sure the food is piping hot before serving. *Leftover bolognese can be frozen but make sure it is fully cooled beforehand *.
