The new and used cask are then assembled and slowly diluted, from 65% to 55% strength during the first 3 years, to have the best balance between new wood tannins and old wood smoothness.
On the nose you will have memories of sweet papaya, dried spices, hints of vanilla. Followed by an intense pepery, dry fruits and long finish on the palate and some smoekiness.
