It appears a pale but luminous straw yellow, and boasts a long-lingering, slender cascade of pin-point bubbles. This utterly self-confident Extra Dry sparkling Prosecco is at its best first as an aperitif wine, then with steamed or baked shellfish, prawns, or sole. It is lovely as well with moderately-sweet pastries and cakes.
