Kitchen Cupboard Curried Potatoes by Budget Food Mummy

Kitchen cupboard staples are some of the most important items when cooking on a budget. Even if you run out of fresh food, you can always make a home cooked meal from your trusty tins and dried herbs or spices.

This recipe for curried potatoes includes everything that can be stored in your cupboard, it is great with naan bread and basmati rice.

When buying onions, a good way to reduce waste is to chop them up and store them in the freezer. You can then take what you need each time they are required in a meal.

Serves 4 Costs 35p per serving

Ingredients:
560g tinned potatoes, drained and halved
400g tin chickpeas, drained
400g tin chopped tomatoes
1 small onion, finely chopped
2 tsp coriander
1 tbsp garam masala
2 tsp turmeric
1 tsp cumin
1 tsp chilli powder
1 tbsp garlic granules
1 tbsp paprika
1 tbsp mustard (any kind)
1 tbsp oil, for frying

1. Heat the oil in a large saucepan, fry the onion and potatoes until the onion begins to brown. Add the chickpeas, mustard, herbs and spices. Stir until the mixture is evenly coated.

2. Stir in the tinned tomatoes and simmer on a low heat for 10-15.
