£13.00 each. Taking Modus Operandi (already barrel-aged and blended beer from red wine and bourbon barrels)
and then adding that blend back into wood for further maturation, building complexity
and intensity. This is one of the first beers we have produced from our new red wine
foudres as opposed to using barrels a second time. The thicker staves and smaller surface area
means that the maturation is slower, with less oxygen pick up and gentle wood character.
The complexity gained from the wood as well as the wine previously held in it means
Beyond Modus is as intriguing as it is delicious.
The tannins and acidity from barrel and foudre aging mean that this is a big beer that needs big
flavours to play with. Gamey red meats lend them selves to the malt character and tannins
while the acidity cuts through any richness. Beef bourguignon hits all the right notes to
pair with barrel character, acidity, fruits and malt, add a splash while cooking while you're at it!
