The time in barrels has meant that there is a distinct sherry note throughout and has brought
out more salinity. Umami is the defining character of the beer and as such umami
dishes, particularly Asian-inspired, compliment incredibly well. Pair up with Ramen,
Okonomiyaki, Tacoyaki, Gyoza for lots of complimentary flavours while the beer lifts the
fattiness associated with these dishes
