Homemade Cheese Scones Anyone?

Ingredients:

  • 1kg Scone mixture (Mcdougalls Savoury Scone Mix 3.5kg £1.99, RRP £9.99)
  • 440ml Water
  • 140g grated cheese (plus extra)
  • 1 egg (beaten)
  • Tomato soup (Hampton Finest Tomato Soup 400g 2 for £1.00, £0.59 each, RRP £1.00)

Method:

Pre-heat an oven to 200°C/425°F/Gas Mark 7. Prepare a baking tray with baking paper. Add the dried scone mixture to a mixing bowl. Transfer the grated cheese to the bowl and mix. Pour some water into the scone mixture and stir, keep adding water until a nice dough forms. Do not over mix. Transfer the dough to a floured surface and knead. Using a floured rolling pin roll out the dough to around 1.8cm thick. Using a 6cm cutter (or any size you like) cut out the scones. Place the scones on to the prepared baking tray, make sure they are spaced out, and brush over the beaten egg. Add some grated cheese to the top. Place the scones on the middle tray in the oven and bake for 10-15 minutes or until golden brown. Serve warm with butter and soup.
