How about trying to make these Portuguese custard tarts, easy to make with pre-rolled puff pastry!
- 1 egg (large)
- 2 egg yolks (large)
- 115g golden caster sugar
- 2 tbsp cornflour
- 400ml full fat milk
- 2 tsp vanilla
- 1 sheet ready rolled puff pastry
Grease a 12 hole muffin tin and pre-heat the oven to 200°C/180°C fan/Gas 6. Mix the egg, egg yolks, sugar and cornflour in a pan. Gradually add the milk till everything is mixed. Heat the pan over a medium heat, keep stirring till it thickens and starts to boils. Add the vanilla. Transfer the custard mixture to a bowl and cover and cool. Cut the pastry in half and lay them on top of each other. Roll together to form a long cylinder and cut into 12 equal pieces. Roll out to form 12 circles (about 10 cm). Press into the tin and spoon in the custard mixture. Bake for 20 to 25 minutes. Leave to cool slightly before eating.
