Mother’s day is approaching on the 11th March do you have any plans? We at Approved Food can help you. We have created a menu for a fun packed day to thank your mother for everything she has done. It includes breakfast, lunch, dinner and a dessert. Check them out below…

Breakfast

How about making homemade pancakes with a range of toppings – syrup, lemon, strawberries, pineapple or whipped cream? Or be adventures and mix and match!

Ingredients:
  • Greens Sweet and Sticky Pancakes 305g (2 for £1.00, £0.59 each, RRP £1.00)
  • 500ml Water
  • 1 Egg
  • Oil (Flora Sunflower Oil Cooking Spray 200ml £0.99 RRP £2.00)
  • Karo Pancake Syrup 470ml (2 for £1.00, £0.59 each, RRP £3.69)
  • Biggi Strawberries in Light Syrup 410g (2 for £1.00, £0.59 each, RRP £1.00)
  • Princes Pineapple Pieces in light syrup 565g (£0.99 RRP £1.00)
  • Tudor Lemon Sauce 250ml (4 for £1.00 or £0.29 each, RRP £0.49)
  • 300ml Double cream

Method:

Make the pancakes as described on the back of the pancake packet. Set aside each pancake and repeat with the rest of the batter. Time to serve: stack a pile of the pancakes on top of each other and add your chosen toppings. We have lemon sauce, syrup, strawberries, pineapple pieces. You could also add whipped cream (pour the double cream into a bowl and whisk until stiff peaks form).

Lunch

Lunch time! We have created a quinoa salad, a great Mediterranean recipe that is refreshing and healthy.


Ingredients:
  • 190g Quinoa (Lupa black quinoa 500g, £0.99 RRP £4.00) *vegetarian and gluten free.*
  • 1 medium Cucumber (cubed)
  • 200g baby tomatoes (halved)
  • 1 red pepper (diced)
  • 200g Olives (halved)
  • 1 red onion (sliced)
  • 200g Feta (diced)
  • Oil (Flora Sunflower Oil Cooking Spray 200ml £0.99 RRP £2.00)
  • 1 tsp Salt (Saxa Table salt 750g 2 for £1.00, £0.59 each RRP £0.85)
  • 1 tsp Pepper (Saxa ground white pepper 25g 2 for £1.00, £0.59 each RRP £0.79)
  • Lemon juice
  • Pomegranate (optional)

Method:

Measure out the quinoa and wash in water. Place into a pan and add 1.5 cups of water. Boil and then leave to simmer for 15 minutes until all the water has gone. Take off the heat and leave to stand for 5 minutes with the lid still applied.  Using a fork fluff up the quinoa and leave to cool. Chop up the cucumber, tomatoes, red pepper, olives, red onion and feta. Heat up a frying pan and add some oil. When hot lightly fry the onion and red pepper. Add the veg, olives and half of the feta to the quinoa. Season with salt and pepper and stir. Drizzle over some lemon juice, the remining feta and pomegranate (if using).

You can also place the prepared quinoa and veg into a half cut red pepper and oven bake.

Dinner

For dinner we have created two great recipes: enchiladas and a honey mustard chicken recipe which is also great with fresh veggies.

Enchiladas

Fancy treating your mum to a  home cooked Mexican meal? Try out this  enchilada recipe below. A corn tortilla rolled around juicy mince meat covered with a tomato sauce and topped with cheese.

Ingredients:
  • Enchilada kit ( £0.99 each RRP £3.19)

The kit consists of 8 corn and wheat flour tortillas, Enchilada Seasoning Mix and a tomato puree.

  • Olive oil (Flora sunflower oil cooking spray 300ml £.099 RRP £2.00)
  • 500g Mince beef (Approved Food meat hamper £15)
  • 1 Onion (sliced)
  •  ½ red, ½ yellow pepper (diced into cubes)
  • 300 ml Water
  • Cheese (grated)
  • Fresh salad (serve, optional)

Method:

Preheat the oven to 180°C/ 160°C fan/ 4 gas mark. Heat up some oil in a frying pan and when hot add the sliced onions and diced peppers. Cook till soft but tender. Add the mincemeat to the frying pan and break it up using a spoon. Cook till browned over. In a bowl combine the puree, water and enchilada seasoning. Pour half of this mixture onto the meat and stir. Heat up the wraps in the microwave. Add enough meat mixture to each wrap and roll up. Place each of the rolled-up wraps into a heat proof dish. Pour over the rest of the tomato mixture and scatter over enough cheese. Bake for 10 minutes until hot. Serve with a fresh salad.

Make sure the food is piping hot before serving. *Leftover meat mixture can be frozen but make sure it is fully cooled beforehand *.

Honey Mustard Chicken

This recipe looks great, packs a bunch and is also healthy cool right?! No artificial colours or preservatives, gluten free, low in sugar by using Stevia (a sweet herb found in South America meaning the amount of sugar can be reduced) and high in antioxidants.

Ingredients:
  • Celebrate Health Honey Mustard Recipe Base 175g (2 for £1.00, £0.59 each, RRP £1.99)
  • 2 Chicken breasts (Approved Food meat hamper £15)
  • 1 Onion
  • 10 medium mushrooms (sliced)
  • 1 red and 1 yellow pepper (chopped)
  • 10 Green beans (chopped)
  • Rosemary (optional)
  • Rice – Tasty Bites Organic Long Grain Rice 250g (£0.99 RRP £1.75)

Method:

Preheat the oven to 200°C/ 180°C fan/ 6 gas mark. Heat oil in a frying pan on medium heat. When hot add the sliced onions and cook till soft. Place the chopped peppers, green beans and mushroom into the frying pan and fry until soft. Transfer the veg and onion to a heat proof dish. Next, fry the chicken breasts and cook till browned on the outside to seal the juices. Add the chicken to the heat proof dish with the veg and pour over the honey mustard base. Stir till everything is covered in the base. Garnish with rosemary (optional). Place in the middle tray and bake for 20 minutes or until the chicken is cooked. Serve with rice.

If cooking up a veggie preheat the oven to 200°C/ 180°C fan/ 6 gas mark. Heat oil in a frying pan on medium heat. When hot add the sliced onions and cook till soft. Place the chopped peppers, mushroom and beans into the frying pan and fry until soft. Transfer the veg and onion to a heat proof dish. Pour over the honey mustard base. Stir till everything is covered in the base. Garnish with rosemary (optional). Place in the middle tray and bake for 20 minutes or until everything is cooked. Serve with rice.

Make sure the food is piping hot before serving. *Leftover chicken can be frozen but make sure it is fully cooled beforehand *.

Coffee Tiramisu

Out first choice is a famous Italian dessert: coffee tiramisu. This is a classic treat consisting of sponge fingers dipped in coffee layered with whipped cream and topped with cocoa. Sounds amazing right?! Follow this recipe made easy with this Greens mixture.

Ingredients:
  • Greens Coffee Tiramisu 70g (2 for £1.00, £0.59 each RRP £1.00)
  • 125 ml Milk
  • 125 ml double cream
  • 1 packet of Sponge fingers
  • 150ml Coffee (cooled) hot_drinks
  • Cocoa (dusting)

Method:

Gather 4 shallow glasses to hold the dessert (if you want to be fancy use wine or cocktail glasses to add that extra sparkle). Now it is time to make the coffee using your mums favourite, let it cool. Add the greens coffee tiramisu mixture to a bowl, pour in the milk and double cream. Next, whisk the mixture till it thickens. Break up the sponge fingers so that they will fit inside the glasses. Soak each sponge in the coffee making sure to coat them well. Place one layer of the sponge fingers into the bottom of each glass. Spoon some of the tiramisu mixture on top of the sponge fingers. Repeat this process of sponge finger and tiramisu mixture till each glass is filled. Scatter some cocoa on top as a finishing touch. Refrigerate until ready to eat.

Creamy Panna Cotta

Out next choice is another famous Italian dessert: panna cotta. Pana cotta is a set cream dessert. It can be a tricky dessert to make but wow your mum with this great easy to follow recipe made with this Greens mixture.

Ingredients:
  • Greens Creamy Panna Cotta 65g (2 for £1.00, £0.59 each RRP £1.00)
  • 250 ml Milk
  • 250 ml double cream
  • Biggi Strawberries in Light Syrup 410g (2 for £1.00, £0.59 each, RRP £1.00) (optional for serving)

Method:

Gather 4 shallow moulds to hold the dessert and place them in a deep baking tray. Add the Greens Creamy Panna Cotta mixture to a pan, pour in the milk and double cream. Mix with a wooden spoon then transfer to a medium heat. Bring to the boil whilst stirring for 2 minutes then simmer for 2 minutes. Transfer the mixture to a jug. Pour enough mixture to fill each mould and place in the refrigerator for 3 hours. Warm up the base of the moulds (to allow the panna cotta to come out easily) by dipping the moulds in warm water. Upturn the moulds and wait a few minutes, keep checking to see if the panna cotta has freed itself form the mould. Pour over the Biggi strawberries when ready to serve. Enjoy!
