Ingredients:

  • 150g butter softened
  • 100g muscovado sugar
  • 1 large egg
  • 250g plain flour, plus extra for flouring (Great Scot plain flour 500g, 2 for £1.00 or £0.59 each RRP £0.65) Flour_ApprovedFood
  • 1 tsp baking powder
  • Pinch of salt (Saxa table salt 750g 2 for £1.00 or £0.59 each RRP £0.85) Salt_ApprovedFood
  • 1 tsp vanilla extract
  • 1 pack boiled sweets (perfectly good hard-boiled sweets 500g 2 for £1.00 or £0.59 each RRP £1.00) Boiled_sweets_ApprovedFood

Method:

Pre-heat oven to 180°C/160°C fan/gas mark 4. Line a baking tray with parchment paper. Combine the butter and sugar and mix. Add the egg and mix again till all combined. Sift in the flour, baking powder and salt. Add the vanilla and mix again. Bring the dough together with a spoon and finish off with your hands. Turn the dough onto a floured surface and roll till about 1 cm thick. Using a biscuit cutter cut out the shapes (choose whatever design you like). Place each biscuit on to a baking tray. Using a knife cut out the centre of the biscuit (or use a biscuit cutter) and place one boiled sweet into each hole. Place the baking tray on to the middle tray in an oven and bake for 15 minutes or until nicely brown and the sweet has melted. Take out the biscuits and allow them to cool, this will set the sweet hard.

*Make sure the biscuit is cooled completely before eating as the boiled sweet can be very hot.*
