RECIPE 1: Chinese Style Egg Fried Rice

February Recipe of the Month Competition Runner Up from Bea Selby of Isle of Wight

Bea used three Approved Food products and tried to think of a cheap, healthy, fast and easy meal that anyone can cook at home.

Bea said, “Living on a low budget doesn’t mean you can’t eat great food! This is one of my favourite recipes and is a great dish to cook at home. It’s fast, delicious and so cheap to make! This version is tastier and healthier than you will find in your local takeaway and far superior to all the pre-packaged versions you can buy. You will never look at real fried rice in the same way again!”

Prep time: 5 mins
Cooking time: 10 mins
Serves: 3-4 people as a main meal or 5-6 as a side

Ingredients

  • 2 packets fazlani foods steamed basmati rice 250g (£1.20 from AF)
  • 1-2 tablespoons tiger tiger shoyu sauce (40p from AF)
  • 1 can of smedleys marrowfat peas 300g (39p from AF)
  • 3 spring onions, trimmed and thinly sliced (30p)
  • salt and black pepper
  • 3 eggs
  • 1 tablespoon of any cooking oil
  • 1 teapsoon sesame oil
  • 3 small anchovy fillets, tinned (50p) (don’t worry if you don’t like anchovies, they add saltiness, flavour and depth to the dish without making it taste fishy!)

Instructions

Stage 1: Put the rice into a bowl and fluff with a fork
Stage 2: Beat the eggs in a bowl and season with salt and pepper
Stage 3: Pour the oil and sesame oil into a hot frying pan, add your anchovies and fry until melted

 

 

 

 

 

 

 

Stage 4: Add the beaten eggs and cook whilst scrambling them with your spoon, while scraping the bottom of the pan to ensure the egg doesn’t stick

 

 

 

 

 

 

 

 

 

 

 

Stage 5: Add your rice when the eggs have formed well cooked individual pieces and fry on a high heat for 2 minutes

 

 

 

 

 

 

 

Stage 6: Add your spring onions and peas, fry for 3 minutes

 

 

 

 

 

 

 

Stage 7: Finish off with the soy sauce and fry for another minute or so. Make sure to taste and check the seasoning is right!

Serve and enjoy!

Bea added: “I’ve used the most basic recipe but you could add anything you like such as chopped veg, or for some more protein try chopped hot dogs (Ye Olde Oak Fiery Chilli Hot Dogs, 89p from AF).
